Cajun-style fish

Serves 2
Ingredients
1 cup of rice
400g boneless white fish fillets (Congre)
1 tsp dried thyme leaves
1 clove of garlic
pinch of salt
1 tsp paprika
1 tsp diced onion flakes
1/2 tsp cracked black peppercorns
2 medium carrots (thinly sliced)
2 handfuls of fresh, thinly sliced green beans
1 tablespoon of vegetable oil
a few drops of Tabasco sauce
Method
Cut fish into 3cm pieces; pat dry with absorbent paper.
Add fish to combined herbs and spices; mix well.
Add carrots and beans to large saucepan of boiling water and cook for 2 minutes; drain immediately.
Heat oil in wok or large frying pan. Stir-fry fish, in batches, until tender; return fish to wok.
Add carrots, beans and oil; stir-fry until hot.
Add Tabasco sauce to taste.
Serving suggestion
Accompany the fish with steamed rice and wash it down with a glass of white wine.
