Cajun-style fish
Serves 2
- Ingredients
- 1 cup of rice
- 400g boneless white fish fillets (Congre)
- 1 tsp dried thyme leaves
- 1 clove of garlic
- pinch of salt
- 1 tsp paprika
- 1 tsp diced onion flakes
- 1/2 tsp cracked black peppercorns
- 2 medium carrots (thinly sliced)
- 2 handfuls of fresh, thinly sliced green beans
- 1 tablespoon of vegetable oil
- a few drops of Tabasco sauce
- Method
- Cut fish into 3cm pieces; pat dry with absorbent paper.
- Add fish to combined herbs and spices; mix well.
- Add carrots and beans to large saucepan of boiling water and cook for 2 minutes; drain immediately.
- Heat oil in wok or large frying pan. Stir-fry fish, in batches, until tender; return fish to wok.
- Add carrots, beans and oil; stir-fry until hot.
- Add Tabasco sauce to taste.
- Serving suggestion
- Accompany the fish with steamed rice and wash it down with a glass of white wine.
