Flamkuchen
This is one of Yves' specialties. It's from Alsace, a bit of land between France and Germany that has been owned alternately by the two countries in a tug-o-war battle that ended more or less sometime after Alsace voted to be French. As a result of this history, the recipes of the region are a fusion of French and German cuisine.
- Ingredients
- Thin and crispy pizza base
- Onion (sliced)
- Bacon or pancetta (cubed)
- Creme fraiche (that's sour cream for you Aussies out there)
- Method
- Pre-heat oven to 180°c
- Pan-fry bacon and onion together
- Spread creme fraiche onto the pizza base
- Top pizza base with cooked onions and bacon
- Pop into the oven for around 10-20 mins until it's cooked to your liking.
- Serving suggestion:
- Serve with an Alsacian dry white wine. Bon appetit!
