Fried Rice
Inspired by the Aussie version of this popular Chinese dish.
Fried Rice
- Ingredients (serves 2 as a main meal)
- 1 cup rice (uncooked)
- Peanut oil (for cooking)
- 120g diced bacon
- 4 shallots (diced)
- 3 garlic cloves (minced)
- 1 or 2 large red chillis (sliced into coins)
- 1 half a cup of of baby corn (sliced into coins)
- 1 cup of frozen/fresh peas
- Soy sauce (to taste)
- Method
- Cook rice in the western method (lots of boiling water), rinse under cold water and set aside to drain
- Heat peanut oil in large frying pan, add bacon, shallots, garlic and chilli – stir-fry until cooked
- Add baby corn and cold, cooked rice, stir and cook for a few minutes
- Add peas and continue stirring until cooked
- Add soy sauce to taste, cook for a few minutes to let sauce sink in and serve.
