Fried Rice

Inspired by the Aussie version of this popular Chinese dish.

Fried Rice

Ingredients (serves 2 as a main meal)
1 cup rice (uncooked)
Peanut oil (for cooking)
120g diced bacon
4 shallots (diced)
3 garlic cloves (minced)
1 or 2 large red chillis (sliced into coins)
1 half a cup of of baby corn (sliced into coins)
1 cup of frozen/fresh peas
Soy sauce (to taste)
Method
Cook rice in the western method (lots of boiling water), rinse under cold water and set aside to drain
Heat peanut oil in large frying pan, add bacon, shallots, garlic and chilli – stir-fry until cooked
Add baby corn and cold, cooked rice, stir and cook for a few minutes
Add peas and continue stirring until cooked
Add soy sauce to taste, cook for a few minutes to let sauce sink in and serve.
