Garlic butter

Great for garlic bread as an accompaniment to lasagne, spaghetti bolognaise or spaghetti carbonara.
Ingredients
200g salted butter
1 large garlic clove
a good shake of herbes de provence
Method
Gently heat butter, finely grated garlic and dried herbes de provence in a small pan
When the butter is warm and starts to froth, clarify it by scooping the froth off the top. Continue until the butter is mostly clear
Pour the butter through a strainer lined with kitchen paper towel into a clean bowl
Sprinkle fresh herbes de provence on top, cover the bowl and pop it in the fridge until the butter sets
Serve with warm and crusty French bread
