Garlic butter

Great for garlic bread as an accompaniment to lasagne, spaghetti bolognaise or spaghetti carbonara.
Ingredients
200g salted butter
1 large garlic clove
a good shake of herbes de provence
Method
Gently heat butter in a small pan.
When the butter is warm, clarify it by scooping the scum off the top with a small sieve. Continue until the butter is completely clear.
Add in the finely grated garlic and a good shake of herbes de provence. Stir well, cover and pop it in the fridge.
After a few minutes the butter will start to set. Give it a stir from time to time to ensure the garlic and herbs are well distributed.
Serve with hot, crusty French bread.
