Garlic butter
- Ingredients
- 200g salted butter
- 1 large garlic clove
- a good shake of herbes de provence
- Method
- Gently heat butter, finely grated garlic and dried herbes de provence in a small pan
- When the butter is warm and starts to froth, clarify it by scooping the froth off the top. Continue until the butter is mostly clear
- Pour the butter through a strainer lined with kitchen paper towel into a clean bowl
- Sprinkle fresh herbes de provence on top, cover the bowl and pop it in the fridge until the butter sets
- Serve with warm and crusty French bread
