Mayonnaise

It's difficult to make the first few tries, but once you get it right, it will work everytime! It takes around a minute to make with a Magimix -- just throw all ingredients in, press pulse, and drizzle the oil in continuously until you have enough.
Ingredients
1 egg yolk
vegetable oil
dijon mustard
ground black pepper
salt
ground piment d'espelette (optional)
Variaton (seafood sauce): Add a teaspoon of tomato paste and a couple of cherry tomatoes
Method
In a mixing bowl, add literally a few drops of oil, the egg yolk, about a teaspoon of mustard and a pinch of salt and pepper.
Whisk with a fork/blend in your Magimix. When the mixture starts to thicken, add a few more drops of oil.
Repeat until you have enough mayonnaise. One egg yolk can support enough oil and mustard to make about 2 cups of mayonnaise
Add more dijon mustard to thin out the mayonnaise (otherwise it gets a bit too thick...!)and to give it a bit of a kick
Add salt, pepper and herbs to taste
If your egg separates from the oil, and you're desperate to keep what you've done, try adding a splash of lukewarm water, let it sit for a couple of minutes and mix again. It may fix itself (doesn't always work!). I'd recommend starting again. Practice makes perfect!
