BBQ essentials: Potato salad

Potato salad BBQ classic. It's also great for a lazy meal when you don't feel like cooking and it's so easy to make! (Narelle)
Ingredients
potatoes
homemade mayonnaise
handful of shallots/red onion (or a regular brown onion will do)
small handful of fresh chopped parsely or chives
salt and freshly cracked black pepper to taste
Method
Chop potatoes and throw into a pot of boiling water with a bit of salt.
While you're waiting for the potatoes, dice the shallots/onion, cut up the herbs and make the mayonnaise
The potatoes are cooked when you can stick a fork through them. Drain the water and let them sit in the colander to cool for about 10 mins.
Transfer the potatoes into a dish, stir in the mayonnaise, and throw the other ingredients in. Mix well with a fork or your fingers.
Put potato salad in the fridge to cool (10 mins should do it) or eat warm. Never serve straight from the fridge (it won't taste as good if really cold).
Serve with freshly cracked black pepper.
Variation
Pan-fry some diced bacon, add it to the potato salad while it's still warm and you've got a German-style winter potato salad which goes great with Bratwurst (German sausage).
Serving suggestion
Serve with barbecued steak/sausages, garden salad and fresh bread.
