BBQ essentials: Potato salad
Potato salad BBQ classic. It's also great for a lazy meal when you don't feel like cooking and it's so easy to make! (Narelle)
- Ingredients
- potatoes
- homemade mayonnaise
- handful of shallots/red onion (or a regular brown onion will do)
- small handful of fresh chopped parsely or chives
- salt and freshly cracked black pepper to taste
- Method
- Chop potatoes and throw into a pot of boiling water with a bit of salt.
- While you're waiting for the potatoes, dice the shallots/onion, cut up the herbs and make the mayonnaise
- The potatoes are cooked when you can stick a fork through them. Drain the water and let them sit in the colander to cool for about 10 mins.
- Transfer the potatoes into a dish, stir in the mayonnaise, and throw the other ingredients in. Mix well with a fork or your fingers.
- Put potato salad in the fridge to cool (10 mins should do it) or eat warm. Never serve straight from the fridge (it won't taste as good if really cold).
- Serve with freshly cracked black pepper.
- Variation
- Pan-fry some diced bacon, add it to the potato salad while it's still warm and you've got a German-style winter potato salad which goes great with Bratwurst (German sausage).

- Serve with barbecued steak/sausages, garden salad and fresh bread.
