Spicy minced beef with rice
Yves made this for the first time in August 2004, because we had minced beef to use and not many ingredients to go with it. The result is a spicy and delicious one pot wonder.
- Ingredients
- 1 tbspn olive oil
- 1 large onion
- 2 garlic cloves
- 2 carrots
- 400g lean minced beef
- ½ litre vegetable stock
- 2 birdseye chillis
- ½ tsp ground cayenne pepper
- 1 tsp Vegemite
- Glug of soy sauce
- 1 jasmine rice
- Salt to taste
- Method
- Pan-fry onion and garlic together in the olive oil until translucent;
- Add carrots and chillis and stir until cooked;
- Add lean minced beef and brown gently;
- Add vegetable stock, cayenne pepper, vegemite and soy sauce;
- Bring to the boil and add raw rice;
- Cover saucepan and bring to the boil again;
- Reduce heat to gentle simmer (do not remove lid) for about 10 minutes (or until rice is cooked);
- Add salt to taste and serve.
- Serving suggestion
- Serve with a glass of red wine or green tea.
