Stirfry
A classic example of modern Australian cooking.
- Ingredients (for 2-3 people as a main meal)
- 1 cup of rice
- splash of peanut oil
- 1/2 red capsicum (cut into chunks)
- two handfuls of brocolli (cut into chunks)
- 2 carrots (sliced into diagnal coins)
- 2 stalks of celery (sliced into diagnal coins)
- 1 onion (cut into chunks)
- 1 thumb of fresh ginger (grated)
- 2 fresh birdseye chillis (minced)
- 2 cloves of fresh garlic (minced)
- 200g of meat (e.g.: chicken/duck breast) (cut into chunks)
- splash of fish sauce
- splash of tonkatsu sauce
- splash of soy sauce
- Method
- Cover rice with twice its volume of water, add a pinch of salt, cover with clingfilm, prick the film and pop in the microwave on high for 8 minutes.
- While rice is cooking, chop up all fresh ingredients.
- When rice is done, stir, and if necessary, add a bit more water and let it cook for up to another 2 minutes.
- Heat peanut oil in a wok/large non-stick frying pan.
- Throw in onion and toss until softens. It will brown a little.
- Add garlic, chilli, ginger, toss for a few seconds then add meat.
- Stir-fry until meat is sealed, then set the lot aside in a bowl.
- Add a splash more peanut oil to the wok/pan and throw in all vegetables. Cook on high, stirring contanstantly, for about 3 minutes.
- Add the meat, spices and peanuts to the wok/pan.
- Add a few splashes of fish sauce, tonkatsu sauce and soy sauce and a few splashes of water. Stir-fry quickly for a minute.
