Tabouleh

A lebanese dish, very popular all over the world, comprised mostly of parsely.
Ingredients
2 cups of cous cous grains
2 cups of boiling water
pinch of salt
1 large bunch of coarsely chopped parsley
1 medium-sized red onion (diced)
1 cup of red cherry tomatoes (diced)
a handful of pine nuts (crushed)
juice of 1/2 a lemon
a few glugs of olive oil
Method
In a bowl, add cous cous grains followed by boiling water and a pinch of salt.
Stir with a fork for about 2 minutes, until the water evaporates and the cous cous grains are cooked.
Add all ingredients (well-chopped) and mix with your fork.
Chill Tabouleh in the fridge for at least an hour.
Serve with whatever you want or eat it by itself for a healthy snack.
