Tomato soup
I threw this one together once in about 2001 and have been making it regularly ever since. It's great for when you're watching your diet because it's hot, tasty, low in calories and good for you.
- Ingredients
- 4 strips of back bacon (chopped up) or cubed pancetta
- 1 large onion
- 2 garlic cloves
- 25g butter
- 3 celery sticks
- 500g potatoes (roughly diced into chunks)
- 800g tinned chopped tomatoes in tomato juice
- 1 vegetable stock cube
- 400ml boiled water
- Basil
- Parsely
- Salt and pepper to season
- Method
- Pan-fry bacon, onion, celery, potato and garlic together in the butter until the onions are translucent;
- Add all other ingredients and stir everything around;
- When potatoes are cooked, add basil and parsely;
- Blend with electric mixer;
- Add salt and pepper to taste.
- Serving suggestion
- Serve with crusty bread rolls, hot from the oven and a glass of red wine.
