Yaki udon
Japanese egg noodle dish
- Ingredients (for 2 people)
- 2 packets of fresh Japanese egg noodles (Udon)
- 1 onion (quartered and sliced)
- 2 carrots (grated)
- 200g mushrooms (finely chopped or grated)
- Red chillis (finely sliced, seeds and all -- we use 1)
- Parsely (finely chopped)
- 2 eggs
- Soy sauce
- Tonkatsu sauce
- Peanut oil for stir-frying
- Method
- Heat peanut oil in a wok
- Sautee onions
- Add grated carrots, mushrooms and chilli
- Add udon noodles and stir
- Add the 2 eggs and stir these into the noodles
- Add the soy sauce and tonkatsu sauce (as much as you want)
- Sprinkle with parsely just before serving and stir through.
- Serving suggestion
- Serve with miso soup and a glass of white wine.
